This recipe is perfect for someone who is avoiding common allergens such as dairy, soy, and eggs. Simple, easy to make, bake in the oven, make-ahead, change up the seasoning…an awesome recipe all around. 

Tender Chicken Meatballs

Equipment

  • 8x8 Glass Pyrex Baking Dish

Ingredients

  • 1 lb Pasture-raised ground chicken turkey would also work
  • 1/2 Yellow onion, minced
  • 1 tsp Sea salt
  • 1 tsp Garlic powder
  • 1 tsp Italian herb blend seasoning
  • 3 tbsp Gluten-free flour of choice I used Bob's gluten-free flour
  • 1 tbsp Avocado or Olive oil
  • 1 tbsp Chia seed egg .75 tbsp dry chia with .75 tbsp water

Instructions

  • Preheat oven to 420 F
  • Oil an 8x8 glass baking dish
  • In a large bowl, add everything except the ground chicken
  • Add the ground chicken in and mix with your hands, just until combined
  • Roll into small balls (about a small palm full) and place side by side, touching in the dish. I got 15 out of my batch
  • Bake uncovered for 20-25 minutes, until lightly brown on top and juices run clear

Serving size is three meatballs Fat: 12 g Carbs: 6 g Fiber: 1 g Protein: 17g
Serving suggestion with spaghetti squash, no-sugar red sauce, a nice arugula salad, and veggie of choice.
