Looking for a treat to satisfy that chocolate-y craving? Maybe you’re on an elimination diet and have to keep allergens and sugars to a minimum? Or you really love chocolate goodness but can’t handle dairy. These are the bomb.com. They only have 5 ingredients: coconut oil, raw cacao powder, maple syrup, salt, and almond butter. That’s IT! You probably have all of those on hand right now… try it out tonight!

The Nicest Almond Butter Cups

Copycat recipe for keto-cups. Allergen-free!

Equipment

  • Mini muffin tray
  • Mini cupcake sleeves (optional)

Ingredients

  • 3/4 cup Extra Virgin Coconut Oil Liquid (might need to melt)
  • 1/2 cup Raw Powdered Cacao
  • 3 tbsp Maple Syrup Can also use stevia or monkfruit
  • 1 pinch Sea Salt
  • Creamy Natural Almond Butter About 5 tablespoons

Instructions

  • Mix coconut oil, cacao, maply syrup/sweetener, and salt with a whisk
  • Pour a small amount into each cup- only to halfway- about a tablespoon
  • You might want to warm your almond butter to thin it. Pour about a teaspoon so that it sits in the chocolate, and there is room on top to cover with additional chocolate mixture
  • Top off the cups so that the almond butter is hidden inside the cup. Pop into the fridge for an hour or freezer for 1/2 hour to set. Store in the fridge

You can get creative with these! Put anything in the middle you like: a freeze-dried banana slice, chopped up nuts, pureed coconut flakes with some maple syrup (almond joy anyone?). Have fun with it!
